What Vegetables to Use for Stir Fry?

The wonderful part of making stir fry is that you can use a variety of vegetables! Whenever I make stir fry, I tend to use whatever vegetables are left in my refrigerator at the end of the week. Some vegetables that go well in stir fry are:

  • Baby Corn
  • Bell Pepper
  • Broccoli
  • Carrots
  • Mushrooms
  • Onion
  • Snap Peas
  • Zucchini

How to Make Chicken Stir Fry

  1. Heat a large pan or wok with 1 tbsp olive oil over medium heat.
  2. Cut chicken breasts into strips. Season with salt and pepper. Cook chicken for 3-5 minutes until fully cooked through, stirring frequently.
  3. Remove chicken from pan and set aside.
  4. Add remaining olive oil. Add in bell pepper, broccoli, carrots, mushrooms, and zucchini. Cook for about 8-10 minutes or until vegetables become soft. Stir occasionally to prevent burning. Add more oil if needed.
  5. Add onion and garlic. Cook for 3-5 minutes or until onion is translucent and garlic is fragrant.
  6. Toss cooked chicken in teriyaki sauce. Stir until vegetables and chicken are coated in sauce.
  7. Remove pan or wok from heat. Serve with rice, noodles, or a side of your choosing.

Tips

  • I recommend cutting your veggies ahead of time and stirring the vegetables frequently while cooking. This will help the vegetables cook evenly.
