What is Adobo?

Adobo is a type of Filipino chicken stew. Adobo can be made with various types of meat such as pork, but I have always enjoyed making chicken adobo.

Ingredients for Chicken Adobo

How to Make Chicken Adobo

  1. Place party chicken wings in a large ziploc bag with soy sauce and minced garlic. Marinate for at least 1 hour, but I recommend marinating overnight for flavor.
  2. Heat a large pan with olive oil over medium heat.
  3. Place marinated party chicken wings in the pan. Cook for about 3 minutes. Don’t throw out extra marinade in a ziploc bag!
  4. Flip the chicken over. Pour in extra marinade and cook for about 2-3 minutes or until chicken has no more visible pink.
  5. Add water, bay leaves, and 1 tsp pepper to the pan. Reduce heat to medium-low and simmer for 20 minutes. The water will slowly evaporate, but make sure there is always water in the pan to prevent burning.
  6. Flip the chicken over. Add rice vinegar and the remaining pepper. Simmer for about 5-8 minutes. If water is low, add a little more to prevent burning.
  7. Remove pan from heat. Serve chicken adobo with rice or whatever you desire. Enjoy!

Tips

  • Type of chicken: I prefer using party chicken wings due to the cut and size, but drumsticks work as well.
  • How long to marinate? If you’re in a time crunch, you can get by with only marinating the chicken for an hour, but I recommend marinating overnight. Marinating the chicken overnight will give you delicious flavor the next day!
  • Always make sure there is water in the pan when cooking the chicken. The chicken can burn easily if too much water evaporates.

Can I Make Chicken Adobo Ahead of Time?

Yes! Once the chicken adobo is prepped in the ziploc bag, it can last in the refrigerator for up to 2 days. If you don’t plan on cooking the chicken adobo for a while, you can freeze it for up to 9 months! Once you are ready to cook the chicken adobo, be sure to thaw the meat in the refrigerator before cooking. I froze multiple meals of adobo while I was in my third trimester of pregnancy to have easy dinners prepped and I’m so glad I did. This is such an easy, fast, and delicious recipe for all!
